This winter in Wilmington has lasted longer than usual! Brrrr! But we can finally see consistently warmer days ahead! YES! And this is the perfect excuse to gather friends and family for an old-fashioned seafood boil! Whether you’re celebrating a special occasion or just want to enjoy a coastal feast, a seafood boil is the ultimate way to enjoy our fresh local seafood with minimal prep and maximum flavor.
At Motts Channel Seafood, we have everything you need to make your spring seafood boil
a success—from the freshest seafood to seasoning blends and fixings. Here’s how to put
together the perfect seafood boil, step by step.

Step 1: Gather Your Ingredients

A great seafood boil starts with fresh, high-quality ingredients. Here’s what you’ll need:
Seafood:
• Shrimp – A must-have for any seafood boil. Choose local, wild-caught shrimp for
the best flavor.
• Crab –Snow or King crabs add a delicious touch to your boil.
• Clams & Mussels – These shellfish add variety and soak up the boil’s flavors
beautifully.
• Lobster (Optional) – If you want to elevate your feast, add some lobster tails.
Vegetables & Extras:
• Red Potatoes – A hearty addition that soaks up all the seasoning.
• Corn on the Cob – A seafood boil staple that adds sweetness to balance the spice.
• Smoked Sausage – Andouille or kielbasa add a rich, smoky flavor.
• Onions & Garlic – Essential for building a flavorful broth.
• Lemons – For squeezing over the final dish.
Seasonings:
• Old Bay or Cajun Seasoning – The key to that bold seafood boil flavor.
• Bay Leaves & Peppercorns – To enhance the broth.
• Butter & Garlic – Melted together for dipping.
Step 2: Get Your Equipment Ready
• Large Stockpot – A 5-10 gallon pot works best, depending on the crowd size.
• Propane Burner – If cooking outdoors, a burner makes it easy to boil large
quantities.
• Strainer Basket or Slotted Spoon – For pulling the seafood and veggies from the
pot.
• A Big Table Covered in Paper – No need for plates! Dump the seafood right onto the
table for easy serving and cleanup.

Step 3: Cooking the Seafood Boil

1. Start with the broth: Fill your pot with water and bring it to a boil. Add Old Bay (or
Cajun seasoning), onions, garlic, bay leaves, and lemons (halved and squeezed in).
We have all of this here so no need for a separate trip to the grocery store!
2. Cook in stages: Add potatoes and onions first – Let them cook for about 10 minutes.
o Add sausage and corn – Simmer for another 5-7 minutes.
o Add shellfish (crabs, clams, mussels) – Cook for 5 more minutes.
o Add shrimp last – Shrimp cooks fast! Drop them in and cook for just 2-3 minutes until pink.
3. Drain & Serve: Remove everything from the pot and let it drain. Then, dump it all
onto your prepared table for a true seafood boil experience!
Step 4: Serve & Enjoy
Pair your seafood boil with melted butter, cocktail sauce, and extra lemon wedges. Add a loaf of crusty bread to soak up the juices, and don’t forget cold drinks to wash it all down! (Also available at Motts Channel Seafood! )
